Sichuan Pepper Beef Noodles

Ingredients

  • 10 ounces udon noodles

  • 3 teaspoons Sichuan Peppercorns

  • 1 tablespoon Vegetable Oil

  • 1 onion (sliced)

  • 4 cloves Garlic (minced)

  • 2 Red Chilies (chopped)

  • 1 pound Ground Beef

  • 2 bunches Bok Choy (sliced)

  • 1/4 cup Oyster Sauce

  • 1/4 cup Soy sauce

  • 1/2 cup Green Onions

  • 1 tablespoon Sesame Oil

Instructions

  1. Cook the udon noodles according to the packet instructions

    1. Drain and rinse under running water to cool

  2. Toast your Sichuan peppercorns in a dry frying pan over medium-high heat until they just start to smoke.

    1. Use a mortar and pestle or a spice grinder to grind to a fine powder

  3. Heat the vegetable oil in a wok or frying pan over high heat.

  4. Add the onion, garlic and chilli and stir-fry for about a minute.

  5. Add the beef and Sichuan pepper powder and stir-fry for 3-4 minutes or until the beef is just cooked.

  6. Add bok choy, cooked noodles, oyster sauce and soy sauce. Stir-fry for another 1-2 minutes until well combined and the noodles are evenly coated with the sauce.

  7. Toss in the green onions.

  8. Remove from heat and toss through the sesame oil

  9. Eat!
