Chicken Pad Thai

Ingredients

  • Rice Stick Noodles

  • 2 tablespoons Olive Oil

  • 1 pound Chicken (sliced into thin strips)

  • 1 Egg (beaten)

  • 2-3 tablespoons Pad Thai Sauce

  • 2 Green Onions (1 inch strips)

  • 2 Limes (juice)

  • 1 tablespoon Peanuts (chopped)

Instructions

  1. Cook noodles per package instruction and set aside

  2. In a large wok or frying pan, heat oil over high heat.

  3. Add the chicken and cook for about 5 minutes or until just cooked through.

  4. Push everything to one side of the pan and add egg to the empty side.

    1. Let egg set for a minute or until just starting to firm up.

    2. Break up egg with a spatula and mix it through the chicken.

  5. Add softened rice stick noodles to the pan, along with the pad Thai sauce.

    1. Use tongs to separate and toss noodles through the sauce until mixed through.

  6. Remove the pan from heat and add green onions, lime juice, and peanuts

  7. Eat!
