Croquetas De Pollo

Ingredients

  • 1 Grilled Chicken Breast (finely chopped)

  • 4 tablespoons Butter

  • 1/2 Onion (finely chopped)

  • 1/3 cup Flour

  • 1.5 cups Whole Milk

  • 1/4 cup Heavy Cream

  • 2 teaspoons Salt

  • 1/2 teaspoon Nutmeg

  • 1 teaspoon Black Pepper

  • 2 cups Panko Bread Crumbs

  • 1 large egg

Instructions

  1. Melt the butter in a large saucepan over low heat

  2. Add the onion and cook, stirring occasionally, until translucent and soft but not at all browned, about 15 minutes.

  3. Add flour and cook, whisking continuously, just until the raw flour smell dissipates, about 1 minute.

  4. Continue whisking while adding the milk and cream a little at a time to prevent the mixture from clumping.

  5. Bring to a boil over medium heat, and boil for 2 to 3 minutes, whisking the whole time.

  7. Spread the mixture on a sheet pan and refrigerate, uncovered, until cold, about an hour.

Shape and fry the croquettes:

  1. Scoop the mixture with a spoon and shape into mozzarella-stick-sized pieces

  2. Scramble the egg in a bowl and pour the panko breading into another bowl

  3. Roll the croquetas in the egg wash, shake off the excess, and roll in the bread crumbs to cover

  4. Pan-fry the croquetas until golden-brown, or place air-fryer for 15 minutes at 380 degrees Fahrenheit

  5. Let cool,

  6. Eat!
