Chicken and Potatoes
1 pound Chicken (cubed)
2 Russet Potatoes (cubed)
1/2 teaspoon Salt
1 teaspoon Paprika
1/2 teaspoon Cayenne Pepper
1/2 teaspoon Garlic Powder
1/2 teaspoon Dried Rosemary
Sauce
1 yellow onion (sliced)
3 cloves garlic (chopped)
1/4 cup Red Wine
1 can (14.5 ounces) Diced Tomatoes
Salt and Pepper
Fresh Parsley Leaves (to garnish)
Combine chicken and potatoes with spices
In a large skillet over medium high heat, add a tablespoon of oil and fry the chicken and potatoes until cooked
Remove and set aside
Add onions to the pan and cook for a few minutes
Add garlic and cook for another minute
Deglaze the pan with red wine and add tomatoes - mix well and let simmer for 15 minutes
Transfer to a blender and blend until smooth
Strain through a sieve to remove any pulp
Plate the chicken and potatoes and drizzle with sauce
Eat!
