Dominican Rice & Beans

Ingredients

  • 2 tablespoons Olive Oil
  • 1 Onion (chopped)
  • 1 Bell Pepper (chopped)
  • 3 cloves Garlic (chopped)
  • 3 cans Pinto Beans (15 oz each)
  • 1.5 cups Water
  • 1 tablespoon Ground Cumin
  • 1 tablespoon Salt
  • 1 tablespoon Black Pepper
  • 2 cups White Rice

Instructions

  1. Add olive oil into large pot when hot
  2. Add onion, bell pepper, and garlic
    1. Saute for a few minutes, until aromatic
  3. Add beans, water, cumin, salt, and pepper
  4. Bring to a boil and then reduce heat to low
  5. Simmer, uncovered, for about an hour or until it has reached the proper consistency
  6. Cook white rice in separate pot
  7. Eat!
