Dominican Rice & Beans

- 2 tablespoons Olive Oil
- 1 Onion (chopped)
- 1 Bell Pepper (chopped)
- 3 cloves Garlic (chopped)
- 3 cans Pinto Beans (15 oz each)
- 1.5 cups Water
- 1 tablespoon Ground Cumin
- 1 tablespoon Salt
- 1 tablespoon Black Pepper
- 2 cups White Rice

- Add olive oil into large pot when hot
- Add onion, bell pepper, and garlic
- Saute for a few minutes, until aromatic
- Add beans, water, cumin, salt, and pepper
- Bring to a boil and then reduce heat to low
- Simmer, uncovered, for about an hour or until it has reached the proper consistency
- Cook white rice in separate pot
- Eat!
