Giblet Gravy

Ingredients

  • Giblets

  • 3 tablespoons Butter

  • 1-2 tablespoons flour

  • Pan drippings

  • Salt and Pepper

Instructions

  1. In a small saucepan over medium-high heat, add the whole giblets, cover with water, bring to a boil and cook for an hour or so

  2. Remove the giblets and set the liquid aside

  3. Scrape the meat off of the neck and chop the giblets

  4. Place the empty saucepan over medium heat, add the butter and melt

  5. Once the butter is melted, add the flour and continuously stir for 2 minute, until lightly toasted

  6. Add the pan drippings and stir well to remove any lumps

  7. Add the chopped giblets and about half of the liquid you set aside and stir

  8. Add more of the liquid until your reach the desired consistency

    1. If it is still too thick, add chicken stock or milk

  9. Salt and pepper to taste

  10. Eat!
