Pickled Onions

Ingredients

  • 2 Medium Red Onions (sliced)
  • 2 Jalapenos (sliced)
  • 2 cups Vinegar
  • 1 cup Water
  • 2 tablespoons Salt
  • 1 tablespoon Sugar
  • 1 tablespoon Peppercorns
  • 1/2 teaspoon Cumin Seeds

Instructions

  1. In a medium saucepan, add all ingredients besides the onions and jalapenos and bring to a hot simmer
  2. Turn off heat
  3. Add onions and jalapenos and stir together for a minute or so
  4. Use tongs to transfer the onions and jalapenos into 2 mason jars
  5. Pour the liquid up to the rim of the mason jars and seal
  6. Let cool for about an hour
  7. Eat!
    1. They will keep in the refrigerator for about a month
