Pickled Onions

- 2 Medium Red Onions (sliced)
- 2 Jalapenos (sliced)
- 2 cups Vinegar
- 1 cup Water
- 2 tablespoons Salt
- 1 tablespoon Sugar
- 1 tablespoon Peppercorns
- 1/2 teaspoon Cumin Seeds

Instructions
- In a medium saucepan, add all ingredients besides the onions and jalapenos and bring to a hot simmer
- Turn off heat
- Add onions and jalapenos and stir together for a minute or so
- Use tongs to transfer the onions and jalapenos into 2 mason jars
- Pour the liquid up to the rim of the mason jars and seal
- Let cool for about an hour
- Eat!
- They will keep in the refrigerator for about a month
