Fabada

Ingredients

  • 1 pound Dried White Beans

  • 1/2 pound Chorizo

  • 1/2 pound Bacon (Thick sliced, cut into 2 inch pieces)

  • 1/2 pound Ham Hock

  • 1 Onion (diced)

  • 4 cloves Garlic (minced)

  • 1 tablespoon Smoked Paprika

  • 6 cups of Water

  • 2 Bay Leaves

  • 1 tablespoon salt

  • 1 teaspoon Black Pepper

Instructions

  1. *One day before cooking* soak dried beans in a large bowl of water for about 24 hours

  2. In a large pot over medium-high heat, add the chorizo, bacon, and ham hock and cook for a minute or two until their fat turns to grease

  3. Add the onion, garlic, and paprika and cook for a few minutes until aromatic

  4. Add the water, beans, bay leaves, salt, and pepper and bring to a boil

  5. Once the mixture is boiling, reduce heat to low and cook (uncovered) for 2 hours, stirring every 15 minutes or so

  6. Eat!
