Fabada
Ingredients
1 pound Dried White Beans
1/2 pound Chorizo
1/2 pound Bacon (Thick sliced, cut into 2 inch pieces)
1/2 pound Ham Hock
1 Onion (diced)
4 cloves Garlic (minced)
1 tablespoon Smoked Paprika
6 cups of Water
2 Bay Leaves
1 tablespoon salt
1 teaspoon Black Pepper
Instructions
*One day before cooking* soak dried beans in a large bowl of water for about 24 hours
In a large pot over medium-high heat, add the chorizo, bacon, and ham hock and cook for a minute or two until their fat turns to grease
Add the onion, garlic, and paprika and cook for a few minutes until aromatic
Add the water, beans, bay leaves, salt, and pepper and bring to a boil
Once the mixture is boiling, reduce heat to low and cook (uncovered) for 2 hours, stirring every 15 minutes or so
Eat!
