Sausage, Potato, & Spinach Soup


  • 1/4 pound Bacon (chopped)

  • 1 pound Sausage (~1 inch slices)

  • 1 Yellow Onion (diced)

  • 4 cloves Garlic (minced)

  • 1 teaspoon Smoked Paprika

  • 4 medium-size Yukon Gold Potatoes (cubed)

  • 4 cups Stock

  • 2 tablespoons Heavy Cream

  • 4 cups Fresh Spinach

  • Salt & Pepper to taste


  1. In a large pot over medium-high heat, add the bacon and sausage and sauté for a few minutes until the oil is rendered out

  2. Remove the cooked sausage and bacon and set aside

  3. Add the onion and sauté for 5-7 minutes

  4. Add the garlic and sauté for another minute or two

  5. Add sausage and bacon back in, along with the paprika, potatoes, and stock and mix well

  6. Bring to a boil, then reduce heat to low and simmer (covered) for about an hour

    1. Stir every 15 minutes or so

  7. Add cream and spinach just before serving,

  8. Eat!
