Sausage, Potato, & Spinach Soup
Ingredients
1/4 pound Bacon (chopped)
1 pound Sausage (~1 inch slices)
1 Yellow Onion (diced)
4 cloves Garlic (minced)
1 teaspoon Smoked Paprika
4 medium-size Yukon Gold Potatoes (cubed)
4 cups Stock
2 tablespoons Heavy Cream
4 cups Fresh Spinach
Salt & Pepper to taste
Instructions
In a large pot over medium-high heat, add the bacon and sausage and sauté for a few minutes until the oil is rendered out
Remove the cooked sausage and bacon and set aside
Add the onion and sauté for 5-7 minutes
Add the garlic and sauté for another minute or two
Add sausage and bacon back in, along with the paprika, potatoes, and stock and mix well
Bring to a boil, then reduce heat to low and simmer (covered) for about an hour
Stir every 15 minutes or so
Add cream and spinach just before serving,
Eat!
