Tomato Basil Carbonara


  • 12 ounces Pasta

  • 1/4 pound Bacon (chopped)

  • ~1 pound Cherry Tomatoes (halved)

  • 3-4 cloves Garlic (minced)

  • 2 Eggs

  • 1 bunch of Basil (chopped)

  • 1/4 cup Parmesan (grated)

  • Salt & Pepper to taste


  1. Cook pasta per package instructions

  2. Place a skillet over medium-high heat

  3. Add the bacon and tomatoes, saute for a few minutes

  4. Add the garlic and cook over medium heat for about 10 minutes, until moisture is evaporated out

  5. Turn off heat and add the pasta

  6. Scramble eggs in a bowl and slowly add about 10 spoonfuls of the hot pasta water to bring up the temperature of the eggs

  7. Poor the egg wash into the pasta and mix continuously to ensure the eggs don't curdle

  8. Add Parmesan, basil, salt, and pepper and mix well

  9. Eat!
