Cajun Seafood Bake

Ingredients

  • 2 pounds Seafood (fish, shrimp, etc.)

  • 3 pounds Potatoes (cubed)

  • 3 tablespoons Olive Oil

  • 4 cloves garlic (chopped or minced)

  • 12 ounces Mushrooms

  • 1/2 cup Cajun Seasoning

Instructions

  1. Preheat oven to 400°F

  2. In a roasting pan, add the potatoes, mushrooms, garlic, 2 tablespoons of olive oil, and 75% of the Cajun seasoning

    1. mix well

  3. Bake for 25 minutes

  4. Chop seafood into bite-sized pieces

    1. Mix with the remaining oil and seasoning

  5. Place the seafood into the roasting pan with the potatoes and mushrooms

  6. Bake for an additional 15 minutes

  7. Eat!
