Clam Chowder
Ingredients
1/4 pound Bacon (chopped)
2 tablespoons Butter (if needed)
1 Yellow Onion (diced)
4 cloves Garlic (minced)
1/3 cup Flour
1 cup Milk
2 cups Heavy Cream
3 Potatoes (pealed & cubed)
8 ounces Clam Juice
1 teaspoon Salt
1 teaspoon Pepper
1 tablespoon Chicken bouillon
2 or 3 cans (6-1/2 ounces each) Chopped Clams - undrained
Instructions
In a large pot over medium high heat, add bacon and fry for a few minutes until cooked
Add butter (if needed) and onions and cook for about 5 minutes, until aromatic and translucent
Add garlic and cook for another minute or so until aromatic
Reduce heat to low and add flour and stir constantly - cook for a few minutes until flour begins to toast
Add milk, cream, potatoes, clam juice, salt, pepper, and chicken bouillon and simmer for 30 minutes - stirring every few minutes
Add chopped clams and stir well
Simmer for another 5-10 minutes
Eat!
