Clam Chowder

Ingredients

  • 1/4 pound Bacon (chopped)

  • 2 tablespoons Butter (if needed)

  • 1 Yellow Onion (diced)

  • 4 cloves Garlic (minced)

  • 1/3 cup Flour

  • 1 cup Milk

  • 2 cups Heavy Cream

  • 3 Potatoes (pealed & cubed)

  • 8 ounces Clam Juice

  • 1 teaspoon Salt

  • 1 teaspoon Pepper

  • 1 tablespoon Chicken bouillon

  • 2 or 3 cans (6-1/2 ounces each) Chopped Clams - undrained

Instructions

  1. In a large pot over medium high heat, add bacon and fry for a few minutes until cooked

  2. Add butter (if needed) and onions and cook for about 5 minutes, until aromatic and translucent

  3. Add garlic and cook for another minute or so until aromatic

  4. Reduce heat to low and add flour and stir constantly - cook for a few minutes until flour begins to toast

  5. Add milk, cream, potatoes, clam juice, salt, pepper, and chicken bouillon and simmer for 30 minutes - stirring every few minutes

  6. Add chopped clams and stir well

  7. Simmer for another 5-10 minutes

  8. Eat!
