12 ounces Pasta
4 tablespoons Butter
1 Onion (chopped)
5 cloves Garlic (minced)
1/3 cup Flour
2 cups Milk
2 cans Tuna (drained)
1 teaspoon Black Pepper
1 teaspoon Red Pepper Flakes
1 teaspoon Salt
1/2 Lemon (Juice)
2 cups Baby Arugula or Spinach
1 cup Parmesan (shredded)
Cook pasta per package instructions
Save 1 cup of pasta water and set aside
Place a skillet over medium-high heat and melt the butter
Add in the onions and garlic and cook about 5 minutes until fragrant and translucent
Add flour, stir continuously and cook another few minutes until lightly golden brown and reduce the heat to a simmer
Add in the milk and whisk together until smooth and creamy
Add Tuna, black pepper, pepper flakes, salt and mix well and simmer for 10 minutes
Add the cooked pasta, lemon juice, arugula/spinach, and Parmesan
Add a little pasta water if the mixture is too thick
Eat!
