Vegetable/Canola Oil for Deep Frying
1.5 pound Cod Fillets
Batter
1-1/4 cups Flour
1/4 cup Corn Starch
1 teaspoon Baking Powder
1 teaspoon Salt
1 cup Beer (lager)
In a large bowl, mix batter ingredients
Cover your fish with a dusting of plain flour, then drop into the batter and coat completely.
Pre-heat oil in deep fryer to 350F (180C)
Once fish is coated with batter, gently place into the deep fryer and cook for 8 to 10 minutes, until golden and crispy.
Remove from oil and rest on paper towels
Season with salt while still hot
Serve with French Fires
