Shrimp Scampi
Ingredients
12 ounces Shrimp (peeled and de-veined)
12 ounces Angel Hair or Capellini Pasta
2 tablespoons Extra Virgin Olive Oil
3 cloves Garlic (minced)
1 shallot (sliced)
2 tablespoons Chili Flakes
1 Lemon (zest and juice)
1/4 cup White Wine
6-8 Cherry Tomatoes (halved)
1/4 cup Stock
1 tablespoon Butter
Parmesan Cheese
1 sprig of Basil (sliced)
Salt and Pepper
Instructions
Cook pasta according to package instructions
Heat a medium skillet over medium-high heat, once hot, add one tablespoon of oil
Once oil is hot, add the shallots and garlic, cook for 2 minutes
Deglaze the pan with the white wine and cook until it is almost evaporated from the pan
Add the stock, chili flakes, cherry tomatoes, lemon zest, and lemon juice - bring to a simmer
Season raw shrimp with salt and pepper and add to the skillet - cook for about 1 minute on each side
Add the butter and basil
Add strained pasta to the skillet and toss to coat evenly with sauce
Eat!
