Shrimp Scampi

Ingredients

  • 12 ounces Shrimp (peeled and de-veined)

  • 12 ounces Angel Hair or Capellini Pasta

  • 2 tablespoons Extra Virgin Olive Oil

  • 3 cloves Garlic (minced)

  • 1 shallot (sliced)

  • 2 tablespoons Chili Flakes

  • 1 Lemon (zest and juice)

  • 1/4 cup White Wine

  • 6-8 Cherry Tomatoes (halved)

  • 1/4 cup Stock

  • 1 tablespoon Butter

  • Parmesan Cheese

  • 1 sprig of Basil (sliced)

  • Salt and Pepper

Instructions

  1. Cook pasta according to package instructions

  2. Heat a medium skillet over medium-high heat, once hot, add one tablespoon of oil

  3. Once oil is hot, add the shallots and garlic, cook for 2 minutes

  4. Deglaze the pan with the white wine and cook until it is almost evaporated from the pan

  5. Add the stock, chili flakes, cherry tomatoes, lemon zest, and lemon juice - bring to a simmer

  6. Season raw shrimp with salt and pepper and add to the skillet - cook for about 1 minute on each side

  7. Add the butter and basil

  8. Add strained pasta to the skillet and toss to coat evenly with sauce

  9. Eat!
