Indian Eggs, Spinach, & Chickpeas
Ingredients
3 tablespoons Olive Oil
1/2 Onion (chopped)
3 cloves Garlic (minced or chopped)
15.5 oz can Chickpeas
Spices
1 tablespoon Turmeric
1 tablespoon Salt
2 teaspoons Paprika
2 teaspoons Cumin
1 teaspoon Allspice
1 teaspoon Black Pepper
1 teaspoon Cayenne Pepper
4 Eggs
3 cups Fresh Spinach
Instructions
Mix all spices together in a small bowl
Rinse chickpeas and pat dry with paper towel
In a 10 inch skillet, over medium high heat, add 2 tablespoons of olive oil
When hot, add onions
When onions are 3/4 sauteed, add garlic, chickpeas, and 3/4 of the spice mixture
Saute for a few minutes until cooked
Transfer to a serving dish
Whisk eggs together in bowl
Add remaining olive oil into skillet, reduce heat to medium
Add whisked eggs to skillet
Add remaining spice mixture
When eggs are 3/4 cooked, add spinach, stir together and finish cooking
Mix the eggs and spinach in with the chickpeas
Eat!
