Indian Eggs, Spinach, & Chickpeas

Ingredients

  • 3 tablespoons Olive Oil

  • 1/2 Onion (chopped)

  • 3 cloves Garlic (minced or chopped)

  • 15.5 oz can Chickpeas

  • Spices

    • 1 tablespoon Turmeric

    • 1 tablespoon Salt

    • 2 teaspoons Paprika

    • 2 teaspoons Cumin

    • 1 teaspoon Allspice

    • 1 teaspoon Black Pepper

    • 1 teaspoon Cayenne Pepper

  • 4 Eggs

  • 3 cups Fresh Spinach

Instructions

  1. Mix all spices together in a small bowl

  2. Rinse chickpeas and pat dry with paper towel

  3. In a 10 inch skillet, over medium high heat, add 2 tablespoons of olive oil

  4. When hot, add onions

  5. When onions are 3/4 sauteed, add garlic, chickpeas, and 3/4 of the spice mixture

  6. Saute for a few minutes until cooked

  7. Transfer to a serving dish

  8. Whisk eggs together in bowl

  9. Add remaining olive oil into skillet, reduce heat to medium

  10. Add whisked eggs to skillet

  11. Add remaining spice mixture

  12. When eggs are 3/4 cooked, add spinach, stir together and finish cooking

  13. Mix the eggs and spinach in with the chickpeas

  14. Eat!
