Potato Soup

Ingredients

  • Optional - 1/4 pound Bacon (chopped)

  • 2 tablespoons Olive Oil

  • 1 White Onion (diced)

  • 3 cloves Garlic (minced)

  • 1/4 cup Flour

  • 3 cups Chicken Stock

  • 2 cups Cream

  • 3 pounds Potatoes (pealed and diced)

  • Salt and Pepper

Instructions

  1. In a large pot over medium high heat, cook the bacon until crispy

  2. Add the olive oil

  3. Once hot, add the onion and cook for 5-7 minutes

  4. Add the garlic and cook for an additional minute

  5. Turn the heat to medium-low, add the flour and stir continuously for about 2 minutes

  6. Add the chicken stock and cream, stir well to ensure there are no clumps, return heat to high

  7. Add the potatoes and stir well

  8. Once the soup is boiling, turn the heat to low and cover

  9. Stir every 20 minutes for 2 hours

  10. Add salt and pepper to taste

  11. Eat!
