Spinach Pesto Pasta

Ingredients

  • 16 ounces Gnocchi (or pasta of your choosing)

  • 8 ounces Spinach

  • 1/4 cup Extra Virgin Olive Oil

  • 3 cloves Garlic

  • 1/2 teaspoon Salt

  • 1/2 teaspoon Pepper

  • 1 teaspoon Lime Juice

  • 1 tablespoon Parmesan Cheese

  • 2 tablespoons Toasted Bread Crumbs

  • ~5 Basil Leaves

Instructions

  1. Cook pasta according to package instructions

  2. Blanch the spinach and then cool in an ice bath

  3. Place in food processor (or mortar and pestle) with remaining ingredients and puree until mostly smooth

    1. Add more oil if too thick

  4. In a large skillet over medium heat, add pasta and pesto and mix well and cook for a minute or so

    1. Add in some pasta water if too dry

  5. Eat!
