1/4 cup Oil
1 pound Chicken (1 inch chunks)
8 Dried Red Chilis (cut in half for more heat)
1 teaspoon Whole Sichuan Peppercorns
1 ½ tablespoons Chili Bean Paste
1 tablespoon Shaoxing Rice Wine
1 teaspoon Soy Sauce
1/2 teaspoon Salt
3 Green Onions (1 inch pieces)
2 Celery Stalks (chopped at an angle in 1/2 inch pieces)
2 teaspoons Sesame Oil
Heat a large skillet or wok over high heat, once hot, add oil
Once oil barely begins to smoke, add the chicken and fry for about 5 minutes, until most of the moisture is gone
Reduce to medium heat, add chilis, peppercorns, and chili paste - fry for about 30 more seconds, mixing well
Add rice wine, soy sauce, and salt to deglaze the pan
scrape the bottom of the pan clean
Add green onions and celery, cook for another 2 minutes
Turn heat off, drizzle with sesame oil and mix
Serve with White Rice
