Caesar Dressing

Ingredients

  • 2 Egg Yolks

  • 1 teaspoon Dijon Mustard

  • 1 tablespoon Red Wine Vinegar

  • 1 tin (50 grams) Anchovies in Olive Oil (optional)

  • 2 cloves Garlic

  • 1/4 cup Parmesan cheese (grated)

  • 1 Lemon (juice)

  • ~ 1 cup Olive Oil

Instructions

  1. Add all ingredients except for olive oil to a food processor and blend until smooth and thick

  2. Add olive oil slowly while continuing to blend to ensure emulsification

  3. Add a bit of water if mixture is too thick

  4. Season with salt and pepper to taste

  5. Serve with Caesar Salad

  6. Eat!
