Caesar Dressing

2 Egg Yolks
1 teaspoon Dijon Mustard
1 tablespoon Red Wine Vinegar
1 tin (50 grams) Anchovies in Olive Oil (optional)
2 cloves Garlic
1/4 cup Parmesan cheese (grated)
1 Lemon (juice)
~ 1 cup Olive Oil

Instructions
Add all ingredients except for olive oil to a food processor and blend until smooth and thick
Add olive oil slowly while continuing to blend to ensure emulsification
Add a bit of water if mixture is too thick
Season with salt and pepper to taste
Serve with Caesar Salad
