Feijoada

Ingredients

  • 2 tablespoons Olive Oil

  • 1 pound Pork Shoulder (cubed)

  • 1/2 pound Corned Beef - substitute with ham (cubed)

  • 1/2 pound Chorizo (cut into bitesize chunks)

  • 1/2 pound Smoked Sausage (cut into bitesize chunks)

  • 1 Onion (diced)

  • 5 cloves Garlic (minced)

  • 1/4 cup (red wine)

  • 1/4 cup Chili Sauce - substitute with chili powder/cayenne

  • 2 cans (15.5 ounces each) Black Beans

  • 4 cups Beef Stock

  • 4 Bay Leaves

  • White Rice

Instructions

  1. In a large pot over medium-high heat, add the oil

  2. Once hot, add chorizo, pork shoulder, corned beef, and smoked sausage and cook for a few minutes until browned

    1. may need to do this in batches

  3. Remove from pot and set aside

  4. Add the onion to the pot and sauté in the oil for a couple of minutes

  5. Add garlic and sauté for another minute or so

  6. Add the red wine to deglaze the pan

  7. Add the stock, beans, bay leaves, chili sauce, and the cooked meats and bring to a boil

  8. Once the mixture is boiling, reduce heat to low and cook (uncovered) for 2 hours, stirring every 15 minutes or so

  9. Serve with White Rice

  10. Eat!
