1/4 pound Bacon (chopped)
16 ounces Sausage (cut into bitesize pieces)
1 bunch Celery (diced)
1 Bell Pepper (diced)
1 Yellow Onion (diced)
1 bunch Green Onion (finely chopped)
3 cloves Garlic (minced)
1/4 cup Olive Oil
1/2 cup Flour
2 tablespoons Cajun Seasoning
12 ounces Shrimp (pealed and deveined)
2 cans (15.5 once each) Kidney Beans
6 cups Chicken Broth
In a large pot, add bacon and sausage - turn heat to medium high and fry until fat is rendered and bacon is crispy
Remove from pot and set aside
Over medium-high heat, add the celery, bell pepper ad onions and sauté in the bacon grease for about 5 minutes
add a little oil if needed
Add garlic and cook for another minute
Reduce heat to medium-low and olive oil and flour, mix well and cook for 10 minutes or so (continuously stirring) until the mixture begins to darken
Add Cajun seasoning, shrimp, beans, chicken broth, and cooked bacon and sausage - mix well
Bring to a boil and reduce heat to simmer
Cook (covered) for about 2 hours, stirring occasionally
Serve with White Rice
