Palak Paneer

Ingredients

  • 8 ounces Spinach

  • 1 tablespoon Olive Oil

  • 1 Onion (chopped)

  • 2 Green Chilies (chopped)

  • 3 cloves Garlic (chopped)

  • 1/2 inch Ginger (chopped)

  • 14.5 ounces Tomatoes (chopped)

  • 1/2 teaspoon Cumin

  • 1/2 teaspoon Turmeric

  • 1/2 teaspoon Chili Powder

  • 1/2 teaspoon Garam Masala

  • 2 tablespoons Cream

  • 8 ounces Paneer Cheese

  • Salt as needed

Instructions

  1. Blanch the spinach and then cool in an ice bath

    1. Place in food processor and blend until smooth - add water if too thick

  2. In a large skillet over medium high heat, add olive oil

  3. Once hot, add the onion, chilies, garlic, ginger, tomatoes, cumin, turmeric, chili powder, and garam masala and saute for 10 minutes until fragrant and tender

  4. Reduce temperature to simmer and add spinach puree and one tablespoon of cream to the skillet, mix well

    1. Add a couple tablespoons of water if mixture is too thick

    2. Cook for 5 minutes

  5. Add Paneer Cheese and gently mix

  6. Drizzle with the remaining cream and serve with Basmati Rice

  7. Eat!
