Enchiladas Rojas

Ingredients

  • Salsa Roja

  • 1 pound Taco Meat of choice

  • 1/4 Onion (minced)

  • 2+ cups Queso Blanco

  • 12 Corn Tortillas

  • Salt

Instructions

  1. In a medium skillet, cook Taco Meat with onions, set aside

  2. Add half of the cheese and mix with the meat

  3. Dip both sides of each tortilla in the Salsa Roja and pan fry in a medium skillet for 30-60 seconds to soften

  4. Add a couple tablespoons of meat to each tortilla and roll them up into enchiladas and place them in a baking pan

  5. Top with cheese and extra salsa raja

  6. Broil on high for a few minutes until the cheese melts

  7. Eat!
