Ingredients
1 cup Dry Lentils
1 tablespoon Olive Oil
1 Onion (chopped)
1 large Carrot (finely diced)
3 cloves garlic (minced)
2 teaspoons Ginger (minced)
1 Red Chili (chopped)
1 tablespoon Soy Sauce
Spices
2 teaspoons Ground Cumin
1 teaspoon Turmeric
1 teaspoon Coriander
1 teaspoon Garam Masala
1 teaspoon Red Pepper Flakes
3 cups Vegetable Stock
1 cup Coconut Milk
Salt and Pepper
Instructions
Soak lentils in water for an hour or two before cooking
Heat oil in a pot, stir in the onion and fry for about 3-4 minutes over medium heat.
Add soy sauce, carrot, garlic, ginger, chili and reduce the heat to low.
Add spices, lentils, and vegetable stock.
Bring to a boil and let simmer for about 45 minutes.
Add coconut milk and simmer for another 10 minute or until the desired thickness
Salt and pepper to taste
Serve warm with Basmati Rice, Flatbread, or Naan
